Dark Maple Syrup

Dark maple syrup is harvested at the end of the season. As spring draws to a close and the snow is almost completely melted, the sap that rises into the tree is full of minerals and is much more cloudy. This brings a very caramelized, almost burnt taste to maple syrup.
