ChocoSol makes small-batch, artisan dark chocolate from bean to bar. Founded in 2004 in Oaxaca, Mexico by Michael Sacco, and has been based in Toronto since 2006. Rather than seeing chocolate as just a product, Michael envisioned it as a vehicle for sustainability, community and learning. Their chocolate is made with direct-trade cacao sourced through long-term relationships with farmers from southern Mexico and beyond. ChocoSol operates with core values to lead and inspire the artisanal chocolate industry to continually improve practices, values and standards.
The origin of their name contains links to 3 languages: English, Spanish, and French. “Sol” comes from the Spanish word for “sun” and refers to our first 1,000 kilograms of cacao roasted using solar energy in Oaxaca. In French, “sol” means earth, recognizing that one must have the earth of the gods to have the food of the gods. In English, “soul” reminds us of the importance of conducting our work with good spirit and good mind.
